Feta salad with warm tomato dressing

The full recipe:

Feta salad with warm tomato dressing

1 container goat feta

1/3 C. olive oil

3 garlic cloves, diced

1 tbsp fresh rosemary or 2 tsp dried

6 large tomatoes, diced. Or if in a hurry, 2 large cans diced tomatoes

1 large orange or yellow pepper, diced

1 tsp red pepper flakes

1 fresh bunch of basil, chopped

salt to taste

mixed greens or arugula

Feta Marinade

1. Into a flat bottomed container add the olive oil, garlic and rosemary

2. Add the feta to the mixture, makingĀ  sure it is coated on all sides. Put aside while the tomato dressing is cooked

Tomato Dressing

1. Add tomatoes, peppers and red pepper flakes and turn on to high heat while stirring, when it a boil, turn down to low heat and simmer for 20 min.

2. Add basil (leave a little bit to add as garnish)

3. Salt to taste

Assemble the salad

1. Put mixed greens or arugula on plates

2. Take feta out of marinade and cut into 4 pieces. Place feta on the greens.

3. Drizzle a small amount of olive oil mixture on top of the feta.

4. Add some of the warm tomato dressing on top of the feta (each portion should have 1/3 c. approx)

5. Add a pinch of basil to each salad and enjoy!

Quick & Dirty Dish Tip

The 10 minute version

* Pre-make the sauce and freeze in portions

* The feta does not have to be marinated, you can put the olive oil concoction together and drizzle it on the feta {although I try to make it the night before cause it really is better!}

1. Warm the sauce, prepare the greens, add the feta to the greens, top with sauce and ta-da eat!
